Date + Cinnamon Loaf

Ingredients:
1 cup almond meal
2/3 cup gluten free plain flour
1/3 cup buckwheat flour
1/3 tsp sea salt
1 tsp baking powder
1 tsp bi carb soda
1 tsp cinnamon
1 tsp ground ginger
1/3 cup coconut sugar, rapadura sugar or brown sugar
1/3 cup melted coconut oil (you can also use olive oil, avocado oil, butter or ghee)
1 cup dates soaked in 1 cup boiling water for 5+ minutes
2 tbsp coconut yoghurt (you can also regular yoghurt if not making dairy free)
Method:
Preheat oven to 180°C (350°F).
Whisk all the dry ingredients together.
Blend the dates and water mixture together.
Thoroughly combine the date mixture and dry ingredients with the oil and yoghurt.
Depending on the brand of gf flour you use, more liquid may be required.
Pour into a prepared loaf tin and baked for 45 minutes approx.
